Recipe: Salmon Patties

These are very quick and easy to mix up and pop into the oven on a busy night, and even my fish-hating kids like them well enough to ask for seconds!  This recipe makes approximately 8-12 patties, depending on their size.  They also freeze well.  Just you put them between two layers of wax paper so you can separate the frozen patties easily.

SALMON PATTIEScat eating fish

2 cans salmon, drained
3 eggs, beaten
1 TBS lemon juice
2 tsp onion powder
1/4 tsp garlic powder
1/2 C flour
1/4 C minced celery (opt.)
1/2 C minced onion (opt.)

Preheat oven to 350◦.  Mix all ingredients together in a bowl.  Spoon into patties a few inches apart on a greased baking sheet.  Bake  for 25-30 min.

Two to Freeze

I am a big fan of freeze-ahead meals. I tried once-a-month cooking, but it was too much for me to find the time and energy to do a month’s worth of meals for our large family all at once. Instead, I often double or triple whatever I’m cooking for dinner, and freeze part of it for another day. The trick is to freeze the extra before putting the meal on the table. Otherwise, my family will see all that food and eat accordingly!

Here are two freezer meal recipes for you to enjoy: Salmon Patties and Turkey Sausage Patties. Freeze the patties between TWO layers of waxed paper (one on top, and one on bottom of each patty), or slip each one into a baggie, and you can pull out as many or as few as you want for a meal.


6 – 7.5 oz cans salmon (I like Redhead brand)
6 eggs, beaten
2 TBS lemon juice
1/2 C minced celery
4 tsp onion powd.
1/2 tsp garlic powd
1 onion, minced
1 C flour or breadcrumbs (approx.)

Mix well. Add a bit more flour if needed so it will stick together. Spray a baking pan with oil. Shape patties and place on pan. Bake at 350* for 25-30 min. Remove from pan and cool before freezing.


2 lbs ground turkey
1/2 C onion,finely chopped (or use 1 TBS onion powder)
1 tsp salt
2 tsp ground sage
2 tsp thyme
1-2 tsp pepper
1/2 tsp garlic powder
1/4 tsp allspice (opt.)
4 TBS fresh parsley, finely chopped (opt.)

Form patties between 2 squares of wax paper & freeze. To cook, partly thaw, then dip in flour and pan-fry until brown on each side and cooked through.
